É tanto arroz, tanto!

Não sei o que me dá quando vou escrever aqui sobre comida. Poderia transcrever uma receita, o mais adequado. E eu lá consigo? Quando preciso saber sobre o gosto brasileiro me informo no Facebook, onde sempre há gente pronta para conversar sobre o que se come ou não.

Depois os livros que só dão o pano de fundo, talvez até se deixem ver como essas figuras chinesas atrás do palco, mostrando sombras. Por exemplo, o arroz. É tanto arroz, tanto! Impossível transformar uma pesquisa em crônica. Nem cabe.

Fui parar no Vietnã, no Camboja e quanta coisa eu não sabia sobre a guerra, o povo, e daí ninguém me segura mais. Tenho de ir até o fim, lendo Graham Greene, Ho Chi Minh, franceses, americanos e nenhum deles fala de arroz nem de receita de arroz. Mas atrás de todas as palavras está ele lá, o principal, o motor, o mais necessário, o propulsor.

Quem come arroz com boca muito boa é o Anthony Bourdain, que adora passear por Burma, Malásia, Coreia, Filipinas, Tailândia, Vietnã. A introdução ao “A Cook’s Tour” dá uma bela ideia sobre o Vietnã de hoje e desperta lembranças.

E uma coisa que ele conta é que Ho Chi Minh foi cozinheiro de verdade, como nós, de ficar na cozinha com a barriga no fogão. Trabalhou no Carlton, de Paris, adivinhem para quem? Escoffier, o próprio. Foi saucier, pâtissier, um profissional da cozinha e ainda arranjava tempo de “correr mundo, escrever manifestos, agradar chineses e russos, driblar os franceses, lutar contra os japoneses, ajudar a criar uma nação, perder a nação e ainda organizar um tipo de guerrilha vitoriosa contra os americanos”. Como diz o Bourdain: “O comunismo pode ser uma droga, mas era difícil um cara tão prendado como o tio Ho”.

Não acreditei muito na história, mais provável que tenha servido em cozinha de navios para poder viajar. Não era sopa fazer revolução e alta cozinha ao mesmo tempo. Perdendo terreno por décadas, liderando aquela gente miúda vestida de preto, wok de palha na cabeça, pisoteando campos encharcados de arroz, búfalos, terrenos cheios de capim, de mato, de cipó, de bananeira, de taioba, de perambeira, de helicóptero, igualzinho a Paraty.

E os camponeses queriam mais era a paz, paz para plantar arroz, sossego, plantar arroz é complicado, plantam pelo gosto bom, pelo prazer. Arroz, arroz, arroz, tão simples na nossa mesa, na boca da China, Tailândia, Índia, África.

E as gentes aprendendo qual arroz se dava melhor naquela terra, ou naquela água, cozinhando-o de um jeito diferente conforme a espécie, toda uma sabedoria de milhares de anos.

E aqui no Brasil, pelo que tudo indica, eram os escravos que tinham a técnica de plantá-lo. Até nos quilombos encontravam-se plantações de arroz. No século 18 um grupo rebelde negociava a volta ao trabalho contanto que pudessem plantar quanto arroz quisessem, no lugar que quisessem, sem ser preciso pedir permissão.

Acostumados a comê-lo na África e com desejos aqui, desejo ainda acrescido pela saudade da terra.

Comida é como linha de costura. Escondida, vai juntando tudo, moldando, dando o formato final.
