O prêmio Nobel de literatura deste ano, Patrick Modiano, sabe que simplesmente com palavras evocativas como nomes de ruas pode trazer às nossas mentes uma cidade. Ele se especializa em Paris, a lista de endereços pode virar um romance se você for imaginativo o bastante e com um certo baú de referências lidas ou vividas.

Para mim, por exemplo, a Inglaterra pode ser descrita num mapa só de palavras, “ups and downs”, Boroughs, Hearths, Grosvenor, Shoreditch, Tottenham, Dickens e Austen, reis e rainhas, raposas e lordes, Oliver Twist pedindo mais sopa.

Aqui na coluna falo muito mais em feijão do que em arroz. Feijão, fubá, farinha me saciam e aos leitores também. Arroz, menos.

Se penso nele, me aparece na cabeça imediatamente uma tigela, arroz tem que ser de tigela. Depois é só soltar um pouco as rédeas para esquecer o arroz asiático não temperado e passar para os pratos como o risoto, a paella, inteiros, fazendo a refeição. O que há de arroz e receita de arroz nesse mundo não tem medida.

Achei uma reportagem de Antonio Callado descrevendo sua visita ao Vietnã do Norte, em 1968¸ lugar impossível de se chegar na época. Queria saber dos vietnamitas, olho no olho, como haviam conseguido derrotar grandes potências como a França, os Estados Unidos. Como? Como? E Callado comenta que não iria ser difícil achar a resposta, ainda que fosse ali, ainda em guerra, pois se sentia em casa, a paisagem era meio Belém do Pará e Campina Grande, meninos nas ruas vendendo pitombas e banana, coco-da-baía, jaca, pinhas, licor de laranja.

“Uma revolução banhada por um rio irmão do rio Chico e feita à base do arroz e da banana-d’água é um fato que tem explicação. Deve ter.” E começa a perguntar.

Uma jovem, veterana em derrubar aviões, pensa muito e diz que a primeira vez que atirou com vontade foi depois dos jatos passando sobre sua cabeça e acabando com sua aldeia. Lembrou-se dos velhos e das crianças e do arroz da cooperativa. Foi o que lhe deu coragem.

Um secretário responde meio obliquamente que no dia 2 de setembro de 1945 não havia arroz no Vietnã. Ho Chi Min fez um discurso e pediu que cada vietnamita se desdobrasse em três: um guerreiro, um aluno ou professor e um produtor de alimentos. Era a única esperança de um país sem dinheiro e sem comida. O Vietnã tinha que sair daquele buraco puxando-se pelos seus próprios cabelos.

Numa casa sobre palafitas um administrador local conta que o arroz antigamente só dava para três meses no ano. O resto do tempo a gente tinha que encontrar comida na floresta. “Hoje vendemos ao governo a cota de arroz e ainda sobra para comer e vender no mercado. Também tem mandioca e muito peixe.” Ganharam as guerras aprendendo a ler e cultivando o arroz. Educação e arroz.

Tanta coisa atrás de um nome! A palavra aparentemente tão simples pode trazer um mundo à baila. Talvez seja por isso que as palavras da cozinha andem soltas pela TV, pelos livros e jornais, na boca de todos. Estamos opinando de tudo um pouco quando falamos de comida. Arroz e feijão não são detalhes.
