De repente, saíram todos os livros que estavam prometidos. Mas o que me encheu de prazer foi “Pão Nosso – Receitas Caseiras com Fermento Natural” (selo Panelinha), produzido por Rita Lobo, do crítico de restaurantes Luiz Américo Camargo, do jornal “O Estado de S. Paulo”.
Ai, Rita Lobo, selo Panelinha! Isso é lá nome de selo? Sei, você começou com essa marca, meninota ainda, agora ficou famosa com Panelinha, não dá para deixar para trás, seria ingratidão das boas. Entendo.
É um livro de verdade, pensado, experimentado passo a passo, com certeza vai ser para sempre nosso melhor livro de pães. Livro de adulto, livro de gente, bem-feito pra burro. Tem conteúdo, franqueza, receita boa, texto inteligente.
Por que livro de cozinha precisa ter capa, formato e tamanho diferentes? Eu preferiria que esse fosse como um missal, sabe, pequeno, gordo, preto, com dourado ou vermelho. Ou como um romance ou uma biografia, ou um livro de ensaios ou de poesia. Ora! (OK, todo mundo prefere livro assim, perdi, e ainda por cima esse é bem bonito, ótimas fotos que ajudam demais, muito bom gosto.)
Que eu saiba, não temos nenhum livro completo, ou bom, de pães. Desculpem-me os autores que eu porventura desconheça. E no mundo inteiro também não tem.
Quando comecei a me interessar pelo assunto, peguei um livro da Elizabeth David, inglesa, e pensei. Vou seguir de cabo a rabo, ninguém vai me aguentar depois dessa enciclopédia. Infelizmente não foi o que aconteceu. Tentava, tentava e saía tudo errado. O problema? Tudo. A farinha, o fermento, o jeito de fazer, os ingredientes, e não havia todo um processo de tentativa e erro pelo qual o Luiz Américo já passou, obsessivamente, cuidadosamente. E aqui, no Brasil.
Podia ser um livro maçante, aliás. Como são quase todos os que só se preocupam com quantidades e tempos e pesos e medidas. Não é o caso, o autor é fluente, você o sente por baixo das receitas, tolerante, amigo, tutor, algumas vezes engraçado, outras filósofo, sempre interessante. E como escreve bem.
Você sabe que vai aprender a fazer pão, e começa pelo fermento, pela graça do fermento natural, o dele feito com abacaxi (sem formiga) e vai picando a mula, passo a passo, fácil, claro, experimentado, caminho já batido, estradinha boa, sem buracos, sem percalços para nós. O autor já passou por tudo e nos alerta a cada esquina da estrada. Quem quer fazer pão em casa já tem seu guia. Pão integral, pão branco, de centeio, de nozes, de figos, de milho, de mandioca, e mais ragu de linguiça e geleia de jabuticaba e pasta doce de castanha e bife à milanesa e rabanadas, um sem-fim, nem acredito.
E é tão conciso e inteligente que não é daqueles tomos de dez quilos. Fino, até. Inteligente demais. Adorei, tenho certeza de que vão gostar também.

    I was wondering if you ever thought of changing the layout of your website? Its very well written; I love what youve got to say. But maybe you could a little more in the way of content so people could connect with it better. Youve got an awful lot of text for only having one or two pictures. Maybe you could space it out better?
