Balaboosta – Admony, Einat;
É, é nome de livro e não de passarinho brasileiro.
O sub-título é “Ousadas receitas mediterrâneas para alimentar as pessoas que amo.”
A autora tem uma escola de cozinha, um marido, filhos e três
restaurantes em NY.
Foi criada ajudando a mãe na cozinha. Diz ela que esteve sob trabalho
infantil forçado por quatro anos e depois foi promovida a sous-chef.
Arrancava as penas das galinhas, lavava a alface até não poder mais
para se livrar de bichinhos, assava batatas, bolos, fritava peixe, moía
seu próprio grão de bico para hummus, tudo sem receitas escritas nem
colheres de medir, nem balança, nem nada. O patrão era o instinto
certeiro da mãe e o conhecimento que ela herdara de várias donas
de casa antes dela.
Foi lá na cozinha caseira que aprendeu o estilo de
cozinhar chamado de balaboosta. A palavra vem do ídiche baal habayit
(dona da casa). E era um elogio. Perfeita dona de casa. Uma balaboosta
além da casa tomava conta da parte espiritual, emocional e do bem
estar da família.
A mesa havia que estar cheia de gente, de comida …
e de risadas.. A balaboosta moderna navega pela vida com um coração
corajoso, uma cabeça determinada, e um espírito de risco e de aventura.
Basta ter gosto pela vida, tentar eliminar o medo, e apoiar-se nos seus
instintos com toda a força possível.
Um homem pose ser um balaboosta, tendo paixão por comida.
É isso – balaboosta é expressar amor através da comida.
Os 3 restaurantes dela são:
Balaboosta, Taïm e Taïm Mobile, e Bar Bolonat
O marido era garçon do Balthazar e chegava em casa num horário
impossível e morto de fome. Ela se levantava para fazer o sanduíche
dele. Querem saber como era o sanduíche?
Fatias finas de peito de peru com camadas de cebola caramelizada,
pimentão grelhado, alface, cogumelos sobre uma ciabatta grelhada e
coberta de aioli de harissa feito em casa.
Não é um livro com receitas jamais vistas. Tem receitas para adultos,
para crianças, as de 5 minutos, as comidas de alma, as românticas, as do
churrasco, as saudáveis, as demoradas e caprichadas, receitas de Israel,
as de restaurante, as básicas, de todo dia.
Nada de espantar muito. Acho que seria um bom livro para uma recém
casada judia. Tem um challah muito bem explicado, um cheese cake de
ótima cara. Outra que me pareceu familiar e boa é a Sinaya, palestino
árabe, tomate, berinjela frita, carne moída temperada,pignoli e uma
camada grosa de tahini. Forno. Comida de alma palestina.
Uma coisa que sempre tive vontade de fazer e nunca fiz – azeitonas
empanadas.
E uma asinhas de galinha com harissa e mel. Bem apimentadas com mel.
Nada mau.
Uma salada de quinoa com grão de bico
E tem um chili de feijão, carne moída, linguicinhas merguez que parece
bem bom. E pimenta! (Aqui no Brasil não consigo que gostem da mistura
feijão e carne moída no prato de servir. Será por serem comidas nossas,
diárias, que nós mesmo misturamos? Não entendo muito o porquê.)
Falafel, baklava…
As fotos são daquelas bem reais, que não atiçam o apetite. Querem
alguma dessas receitas? Escrevo aqui. É só pedir.
Livro de cozinha é uma coisa difícil de recomendar. Eu não compraria
esse, (mas comprei)por já ter todas essas receitas em algum livro ou outro.
Mas, se fosse uma jovem cozinheira talvez me encantasse por ele.
Todo mundo tem um livro preferido, sujo de molho, folheado até não poder
mais. O que significa que ele chegou em boa hora, a receita deu certo.
O meu preferido é velho, velho, uma edição do Fannie Farmer. Jamais uma receita
de lá deu errada. Mas foi feito numa época em que as latas eram um
luxo e tem lata de tudo nos ingredientes. Na época dos orgânicos não
deve fazer sucesso nenhum. Cada roca com seu fuso cada livro com seu
uso.
Ah, o meu lado fofoqueiro! Comprei a biografia da Lily Safra, de Isabel
Vincent. Ebook, Kindle. Não dá para acreditar que eu largue um grande
sociólogo para ler Gilded Lily, mas a verdade há que ser dita. É sempre
fascinante ver alguém nascido num subúrbio do Rio de Janeiro se tornar
umas das viúvas mais ricas do mundo. E dá-lhe fofoca!
Engraçado é que nas fotos ela só parece alegre e feliz com o marido
pobre que ela largou como uma batata quente algum tempo depois
de casada. Vai saber, e além de tudo não temos nada com isso. Mas a
extrema riqueza sempre dá uma curiosidade a nós, pés rapados. Por que
mais uns milhões se já tem tantos…. Porque sim, ora!

My blog has a lot of completely unique content I’ve either written myself or outsourced but it appears a lot of it is popping it up all over the internet without my agreement.
