Para começar, é um mercado que está sempre mudando. Você não pode descansar sobre os louros e dedicar seu tempo a outra coisa, enquanto alguém toca sua firma. Nunca vi profissão em que o olho do dono é tão essencial, em especial para criar a identidade do lugar.
Acho que a pior faceta do negócio é a sua imprevisibilidade. Do tipo: Ah, maio é o mês das noivas, temos que nos preparar. E não acontece nenhuma festa de noiva em maio e, sim, em julho. O que aconteceu? A maioria das noivas agora trabalha e só pode se casar nas férias. É preciso estar atento e forte…
A tal da globalização, por incrível que pareça, influencia o mercado dos bufês. É a China? A recessão americana… O Brasil não foi atingido por crise nenhuma!
Não foi? E o dinheiro de todo mundo, para onde é que foi? Estamos poupando? Na televisão dizem que não temos o costume de poupar e que nunca iremos para a frente sem fazer investimentos. E então, onde ficamos?
Vamos para os sociólogos e filósofos contemporâneos e todos acham que está tudo errado e que nada tem conserto. É como se estivéssemos dando um pulo no escuro.
Nossos paradigmas estão mudando, em bolhas, em esferas, em sustos, em ais e uis, em sorrisos alvares, mas ninguém mais é profeta, a não ser que…
Acho engraçado que os sábios comecem sempre dando como exemplo das nossas relações o Facebook. Antigamente, tínhamos cinco amigos. Hoje, temos 5.000 de uma vez e não são amigos de verdade.
Bem, só na cabeça de filósofo poderia passar que achamos ter realmente 5.000 amigos. É claro que ninguém pensa que os amigos do “face” irão todos ao nosso enterro, ou nos visitar no hospital no nascimento do nosso filho, ganhar ursinho de lembrança.
Sosseguem, filósofos, parem de dar esse exemplo para justificar qualquer coisa, não cola. Sabemos melhor do que vocês quem são nossos amigos. Fumem seus cachimbos na paz da pós-modernidade líquida, que o problema não é esse.
A verdade mais próxima é que hoje dependemos mais da palavra “dinheiro” do que da palavra ”amigos”. Já tentei pensar em como ter amigos e não ter dinheiro nenhum, mas não deu. E apesar de só se falar em dinheiro e economia, ele está cada vez mais escondidinho (para falar em jargão de bufê) e, mesmo tirando todo o purê de cima, a carne-seca fica lá no fundo e é bem pouca.
Então, se todo mundo —ou quase todo mundo— está contando as últimas moedas, é preciso que nos reeduquemos também na maneira de receber os poucos amigos que ainda queremos ver cara a cara.
Simples, tornemo-nos simples! Você está em sua casa, convidou uns poucos, vamos nos reeducar. Uma salada, uma bela receita de massa, um vinho, uma fruta assada na hora. Chega de muita comida, muita frescura. Lembrem-se, tudo que é sólido se desmancha no ar ou o mar não está pros peixes, ou “whatever”!
